Ive got the best days to go to disney (the day after a EMH day and not weekends)! But what times would you say are the best times to go - as in first thing or at night. Also when are the quietest times to eat?
Yes, avoid EMH days if you aren't staying onsite, but generally early,early, early is the key! Get there before opening, wit a definite plan of which rides etc you want to do and hit those before the park gets too busy. Most popular rides are busy all day anyway, so a late start won't help.. and FastPasses usually go for the headliners before the afternoon or early evening.

Eat when other people don't, you will find shorter waits for your food and also you can take advantage of shorter lines at attractions when everyone else stops for meals. We find that if we either have a large breakfast then an afternoon snack or a quick breakfast and an early lunch this works for us. We can then keep going until dinner in the evening.
we always hit the parks early and aim to be at the gates for opening time.
that way we walk fast, me leading wife and kids jogging behind ignore the shops and characters (as much as you can) and do the rides you want. then relax see the sights, do the shops and characters.
but if its your first time is is difficult to say as you need to be able to take in all the atmosphere and enjoy yourself.
one bit of advice i will offer you is keep drinking, and think about your salt intake. sorry if im teaching you to suck eggs
