Sorry i didnt see this post yesterday. I hate for these sorts of posts to go un-noticed.
You have good choices. Do you know what time Wishes is on the day you have Crystal Palace? If it is 9pm or later then your ADR time will be ok for you to eat and then go and see the fireworks.
Illuminations is on at 9pm at Epcot each night. When you check in at the podium of Rose and Crown ask if they have a table on the terrace available. If they do you will be able to dine and have a nice view of the fireworks from your table.
I havent tried the Rainforest Cafe at AK but lots have and they seem to enjoy it.
Have fun and sorry your post was overlooked.

Very good choices but if you have small children with you i would maybe consider changing the times of the evening meals!
Last year we had a couple of meals after 7:30 and both times DD and her friend (aged 10) fell asleep at the table! After a busy day at the parks a late meal was just too much for them! I personally prefer booking dinner for about 6:30!
We had a 7:40 adr at The Rose & Crown and had just finished desserts (well those of us who were still awake had ;) ) when Illuminations started! Perfect timing!

They are both definately must sees. You can do them both on the same night. You could have your meal at Crystal Palace, see Wishes at 10pm and then Spectromagic at 11pm. The second Spectromagic will be less crowded than the first. It will follow a route around the park much like the daytime parade so just pick a spot along the route and enjoy. We usually stand on Main Street but not too sure how busy that area will be when you go.
We have seen Wishes from various places and enjoyed it wherever we have been. Someone else may be better to advise you on the best place to stand for Wishes.
Have a great time.

Fingers crossed that you get a table for iluminations then!:thumbs-up Our Rose and Crown ADR is for 7.20pm so really hoping we get a table outside.
Wolfgang Pucks is a great choice.:) We really enjoyed our meal here in August 2005.
Where are you dining at Busch Gardens?
