Before I went to the parks I felt like you do, but after sitting out on some of the big rollercoasters at the beginning of the holiday, I took the bull by the horns and thought that it may be the only chance to do all these things- so go for it. I went on Everest and really enjoyed it. The only big rides I missed out of the WDW parks and IOA and US was the Hulk and Duelling dragons. But being a glutton for punishment I'm going to give them a try this year.
My new policy in life(after a health scare) is you're only here once so go for it when you can!!!!

I'm a bit of a coaster wimp too but i can quite happily do:
Splash Mountain
Big Thunder Mountain
Everest
Soarin'
Dinosaur
Test Track
Mission Space (non spinny version)
The ones i quite enjoy but have to force myself to do are:
Space Mountain
Rock 'n Roller Coaster
The Mummy
Ripsaw Falls
Hope that helps!
I always sit out the coasters, but I love spiderman, cat in the hat, haunted mansion, all the kiddie type rides:pgig:;)I love to see the people I care about having fun and that makes me happy;)

Also a bit of a wimp. 'I don't do upside down' :D
Maybe some others you would like...
Disney: Kali River Rapids and Everest (Animal Kingdom)
Universal: Popeye and Bluto Bilge Rat Barges, Spiderman (IOA)
Probably loads of other rides but, other than those already mentioned thats all ive got for now! If you are really curious what goes on on the ride, you can go on google video or youtube and find videos from ON the ride.
Hope that helps.

The Mummy is just the best! It starts out quite tame and then turns into a rollercoaster but it does not go upsidedown it just goes fast. I'm also a scaredy cat and don't do coasters - terrified of heights and won't do anything that goes upsidedown - but I love the Mummy. I would also recommend Spiderman and Everest is also good as it doesn't go upsidedown either.

aw come on, you gotta try.
You gotta do everything once to see if you like it, you can always close your eyes, but at least you can say you did it.

I am also a scaredy cat and terrified of heights.
At WDW I can happily do all the following:
Splash Mountain
Big Thunder Mountain
Soarin'
Dinosaur
Test Track
Mission Space
I can do these, but they are scary:
Tower of Terror
Rock 'n' Roller Coaster
Everest
Space Mountain
The only thing at WDW I'd not ride again is Primeval Whirl at AK, evil ride!
At Universal:
MIB
Jaws
Mummy
Popeye
Ripsaw Falls
Jimmy Neutron
are all OK.
I don't do big high coasters, so no Kraken, Hulk, Duelling Dragons or anything for me! There's plenty more to do without those.
