A handcrafted raw cows milk cheese made in Modesto, California is the direct result of the roots of the Fiscalini family in Switzerland.
They had produced a cheese remarkably similar in taste, aroma and texture to the cheeses in the Ticino region of Switzerland
The cheese is slightly straw coloured with a few irregular eyes
It has a thin natural hard rind, a sweet milky caramel like flavour, an enchanting aroma, and a semi soft springy texture
Pair this fine cheese with Candied Marcona Almonds
Flixer
Made by Mario Cotti in the canyon of Graubunden in Eastern Switzerland, Flixer is one of the rarest cheeses produced anywhere
Only produced from May - October from Mr Cottis's herd of 12 or so sheep, the small wheels are aged for a period of around 4 months
During this time the cheese undergoes a glorious transformation, the flavour is at once complex, yet subtle, with hints of chestnut

This soft, smooth, raw goats milk cheese is made to resemble the shape of a bell, which is where its name originated
This cheese is produced in the South West of France neighbouring the Gironde River and the Bordeaux wine region
It is aged for about 3 weeks and the flavour intensifies with age
Young Clochette has a white rind and a semi firm centre with a mild flavour
Complement this cheese with Raisins on the Vine
Hubbardston Blue
From Westfield Farms in Hubbardston, Massachusetts, this surface ripened blue cows milk cheese is aged for 30 days
When ripe, its original bright blue rind is covered by a powdery grey bloom and the surface is crenulated by the creamy consistancy of the interior
The result is a complex taste, reminiscent of truffles and mushrooms
