for a half day you could try Gatorland we really enjoyed it - although it gets mixed reviews on here (i suppose you cant please every one)
also
Titanic (im not sure where it will be when you go as it's currently closed and reopens in december in a new location)

well we really enjoyed Gatorland...was more of a half day though...not far from the Florida Mall so maybe finish the day off there if you wanted...it was fairly inexpensive and we would have gone back last year but it was being refurbished after a fire.
The first year (in fact, I think it was the only year) we'd just missed out on being able to buy gator nuggets...(urgh!!!)...they'd been banned from farming alligators for meat not long before we went...
Still it was a nice time there but might not be for everyone...

We tried at lot outside the parks this year. Loved the airboat ride, Titanic Experience would have been good but on a previous post, found out it closed, go to Cocoa Beach if there's a space launch when you're there, Fantasy of Flight is brill if anyone's interested in planes(you can have a flight in a biplane for $60).
Next time we're hoping to go to Wonderworks - this looks really interesting.
Good luck in finding your ideal days out!

Try Kelly Park. It's a State Park. It costs $1 per person and you can float down a natural stream on a tube (you can hire them or buy really cheap ones in Walmart. There's a web site if you stick it into Google and you'll get directions. It's natural Florida at its best.
We also love the boat trip at Winter Park - costs about $10 per person and it's a lovely relaxing afternoon out.

You could also go Horse Riding in Kissimmee. I know there are several places that do this but the one I have booked is http://horseworldstables.com/new/trail.php
Or, you can go to a Petting Farm, also in Kissimmee http://www.greenmeadowsfarm.com/

We spent 2 weeks in Florida 5 years ago and never touched a park.
we went horse riding I believe StaceyC has given you a link to horse world. We also hired jet skiis. You have to be 21 to hire them and the kids can go on with you. Kids can drive but you have to be on the back. Be warned my daughter turned too sharp over the ripples of my husbands doughnut move on his and we fell off. Rest assured though the guy is over to you in seconds to help you out of the water. It was a fun afternoon.
