DH bought me an Acer Aspire 3690 laptop recently, but bless him, thought it was a bargain. Nice though it is, it seriously lacks memory (512mb :(). I want to add more memory and have had a look on ebay and various online shops, but havent a clue what I'm looking for. Can someone help and are they easy to fit?

Try here - http://www.crucial.com/uk/ - they have a memory advisor tool so you can make sure you get the right memory.
Usually very easy to fit, most laptops have a removable cover underneath and then it's simply a matter of slotting the new memory in.

i get my memory from there, good thing too is it tells you how many spare slots you have, and what type/speed of mem

To keep the cost down as manufacturers own memory is normally very expensive, have a look at kingston memory on google. There the worlds biggest memory supplier and supply compatiable memory for all the big manufacturers pc's & laptops, they come with a lifetime warranty and are normally 30/50% cheaper than buying the manufacturers memory :-) All you do is type in model & make of your laptop and it will find the part for you straight away

I've since doubled my memory, I've rerun Crucial.com and it tells me I only have 768mb memory but the properties in my computer says 1048mb :confused2
Any ideas why this is?

sounds like you have shared graphics memory this takes system memory and uses it for video memory looking at it you are using 256meg of system mem for graphics.
