Yes i have been before ! but always stayed off site, never had a car and managed to do it all. this time since we are staying onsite i figured it will be easier to do more parks on one day

Try and make use of the EMH they will be handy for a 7 night stay. You should also do princess and pirate party and combine magic kingdom!
I will be there when you are to!

I think this is the first time OP's nieces are going and they will want to experience everything and they are only going for a week.

the family really enjoyed the golden corral they had everything from pizza to steaks on an all u can eat buffet. the rain forest cafe in animal kingdom was a great dining experience if you are rushed and want to eat in the parks also sea fire inn at seaworld was recommended to us, but this shut around 4pm in july best to check closing times here.

looks really busy but you will have plenty of time to sleep on the plane home! only thing i would query is going to Epcot for fireworks but having dinner at rainforest cafe? is there no where in Epcot or maybe the boardwalk you fancy for eating just to cut down on a wee bit of the travelling back and forth?
have a great time

I hope you can do all you've planned but with youngish children I think it may turn out to be to much and you and they won't enjoy themselves so much. With only a week I would miss out universal parks and either do seaworld or Aquatica but not both in the same day. you will also save some money
Staying onsite is great but it still takes time to get around you need to add in time to wait for bus and then making your way to entrance (bag check) and then to your restaurant before ADR time, this on average takes 3/4 to 1 hour from leaving rooms
I would defo change your Rainforest ADR for an epcot one as suggested
what ever you decide have a great time. :)
