We have done a lot of the restaurants on your list.
WCC was good fun, the kids enjoyed it but our server was a little quiet. We would have preferred a loud one!:D
CG is my most favourite restaurant so a big thumbs up from me for that one!:thumbs-up
1900 Park Fare breakfast. We did this when it was at the Grand Floridian Cafe during its refurb. The food was very good and fresh. Characters were great but took an hour for us to see the Mad Hatter so we were waiting around a fair while. But still enjoyed it.:)
'Ohanas was fab. We loved the breakfast especially. Dinner was ok from a veggie point of view but DH liked it better than me as he's a big meat eater.
Wolfgang Puck we did in 2005 and loved it in there. The service and food were fab. But we now just go to the Wolfgang Puck express as we found the food to be just as nice and its a counter service.:thumbs-up
Crystal Palace we have done twice, one breakfast and one lunch. Preferred the breakfast. But have found that now the boys are 7 and 5 they are not so much into Pooh bear so they are not so bothered about going.
We have done both the character meal at H & V and the Fantasmic package there. We found the food to be ok at the dinner nothing spectacular but lots of choice. We preferred the character meal. Judging by the pics of your kids in your signature, they will love it here. Lots of fun.:thumbs-up
Haven't done the rest so can't comment but we will be booking Chefs De France for Dec. It gets great reviews.
we have been to ohana's and loved it. :d:

Wow, lots of great ones on there.
Crystal Palace - one of any absolute favs as I love Winnie the Pooh, my DH booked for the breakfast on my 30th birthday and it was so lovely.
1900 Park Fare - Another great one, haven't done breakfast but dinner was fab. Lovely food.
Playhouse Disney - is this at H&V? My kids loved this as they love the Little Einsteins, food not as good as others but characters make up for it.
San Angel - Love Mexican, nice place for the adults not sure about kids I know mine wouldn't eat anything from the menu except maybe the tortillas.
O'hanas - Had a great character breakfast there, the server was poor in fact the worst we've ever had at WDW and had a weird facination with our twins!! She repeated everything she'd said as she couldn't take her eyes of tehm and obviously lost her train of thought or was just so bored of saying the same thing to diners.
California Grill - would love to try this but not sure if it's too post with 4 boys!1 (think I'll start a thread asking the question!)
I'm sure you'll love your choices.
