There will no doubt be people who know more about this than I do but here goes anyway.
We did a helicopter tour to the Grand Canyon the first time we went to Las Vegas which included a ranch experience. It was quite nicely done, the ranch dudes were very funny and friendly and we had a cracking breakfast BBQ. The sights were awesome.
We later found out we had visited the west rim of the Canyon on this trip. From talking to others, we found out that most of the LV tours only go to the west rim, which is still part of the GC but isn't the best place to view it from. This is the busy south rim you mention, or the less travelled north rim.
The new Skywalk is on the west rim. There are a lot of bad reviews stating that it is a rip off, the roads are very poorly maintained and there are no photo opportunties except posed ones and taken by the owners of the Skywalk which cost a bomb. I've never been to the Skywalk so I can't really comment.
To be honest although others have stated we failed to see the main part of the GC we still saw some awesome views from the west rim area and certainly didn't feel cheated. It was a good value trip and I think most people will be happy with that. Of course there are options to overnight near the Canyon and visit the south rim, but from my experience people just don't have time to do this, unless it is included in their itinerary. It is a much longer journey, no doubt rewarding but time consuming.
As for the Hoover Dam, this is easily visited from Las Vegas on a day tour to include Lake Mead or can be incorporated into a very long day to include the west rim GC.
I'm guessing you are looking at overland day trips and not flights or helicopter tours?
Hope this helps
