We've not used those restaurants for breakfast or lunch but for the evening meals we usually eat around 7.00pm

Whispering Canyon: Great atmosphere, noisy, HAVE the Skillet.
Boma: Tremendous variety of food, suiting all tastes.
Crystal Palace: Wonderful buffet Character meal - ate here at 4.30pm and the characters were full of life.
Hollywood and Vine: had the fantasmic package. I wasn't impressed and the food was bland and tasteless.

Haven't eaten at 1900 Park Fare.

Basically pick times to suit your family and other commitments you have.
For breakfast we usually do the earliest time, as we are early birds and like to get in the parks early. Usually around 7.30am.
Evening meals around 7pm generally, but before fireworks cruises earlier and to watch Wishes from the California Grill later! 6pm when we are going to watch Cirque.
Don't do sit down lunches so cannot help there.

I enjoy Hollywood and Vine as part of the Fantasmic package - sure it's noisy and like a canteen, but there is usually something for everyone and you get the reserved seating for Fantasmic without the prices they charge at Brown Derby.
