Depends on the weather and cloud cover, we saw a launch from the front door of the villa we stayed in at Highlands Reserve, just a smoke trail in the distance and a noise like distant thunder a few minutes later. Not too exciting from that range really. You'll be about 60 miles away in the parks!

one year we were in one of the water parks at disney and we felt/heard it and could see the white smoke around it going up

Given the right weather conditions you will be able to see and hear it from WDW.
There will be plenty of coverage on TV too or online on NASA TV.

One year we did the "Keys to the Kindom" tour and were in the backstage area at MK, we stopped the tour and stood outside and watched the Shuttle take off over the top of Cindy's castle, all orange light and yes, even sound!
Tremendous.

we saw it go up from Universal last time we were there. Everybody just stopped and clapped.

We saw the very last Titan rocket from macy1's villa in Davenport. Had beeen to KSC that very day too but didnt realise that there was a launch scheduled that day.
Girls were in the pool, myself and Suzie watching a launch on the local news when I noticed a red square that said "Live". I looked out the doors and could see the rockets tail going up and then unbelievably, we could even see the bottom half of the rocket break away. All this from probably 40 odd miles away.
Have seen the shuttle on the launch pad twice but unfortunately never seen one actually go up.

We saw the shuttle last August from the entrance to Windsor Hills. Although it was only in the distance it was still a great feeling to see it.

One year we were watching the Shamu show and saw a rocket (not the shuttle) taking off in the distance.

Take a look at this thread (http://www.thedibb.co.uk/forums/showthread.php?p=2328562&highlight=shuttle+launch#post2328562). I ran outside after the shuttle launched and snapped a few pictures. I live just 3 miles from Universal so this would give you an idea of what you might see. The cloud coverage is a good indication of how it can limit things if it is a cloudy day. On a clear day you can see it for quite some time.
We saw Discovery going up when we was at Port Orleans FQ last month.... great moment.
Back in 2005 we saw one of the launches at Blizzard Beach......well we saw the fireball at the end and the smoke trail but it was still exciting to see:spin:
