I was wondering about this as well. We are there last 2 weeks in August, and I don't know whether this show is on then or not.
I've been checking the Seaworld website and the show schedules for August aren't available yet, but I'll keep looking. :)
When we've gone the past two times, in August, the show has been on every night, no particular dates.

You may find that if you're going from mid september that this show isn't on....it finished just before we arrived last september and we're not expecting it to be on when we go this time. I think they just do the show during the peak season.
****edited**** Just checked the seaworld website and all the evening shows finish on September 1st.... http://www.seaworld.com/sitepage.aspx?PageID=327

we are just back and done the shamu rock show with dinner. We got reserved seating for the show and then afterwards we got a buffet meal which takes place just behind the show. It was a great night.

You'd think that would be the case but apparently not. Between September and November (just before thanksgiving) isn't classed as peak. We tend to find that if there are any rehabs to be done at the parks then generally they will shut rides etc....in September/October, that way they can try to avoid problems during the thanksgiving/christmas period...although they do occasionally do updates during the summer.
From the beginning of September all the parks start shutting early (bar MK & Epcot - because of firework shows) - September is a pretty good month to go as it's relatively quiet but unfortunately it's the month where they start cutting back on park hours and shows :(
