Which parks are you doing? Do you mean a 14 day flex ticket (Universal and Seaworld) or a 14 day Disney pass?
If you are just doing Disney, or just doing US/IOA/Seaworld, an itinerary is not essential, but if you're trying to cram the whole thing into 10 days then you are going to need a plan of sorts to ensure you see what you want to see. Taking note of the crowd levels on different days really does make a difference, and you want to be sure to be in the right place at the right time for parades and fireworks.
We usually have a very good idea of crowds, opening hours and parade times and then have a flexible itinerary which we adjust as we go along. Nothing too complicated but it does make sure you don't have to spend any more time queuing than necessary.

When do you go and what do you hope to fit in?
If you want to see it all in 10 days you will need some kind of a good plan. If you are happy to see and do less, chill more and just go with the flow then an itinerary isn't going to be necessary.
It's up to you really. Have a look on the trip planning forum you will see an assortment of itineraries there.
