Hi. I think this question could go in two areas. When staying on site do you have to have a special Disney ticket for all the days you are there? I know that used to be the case, but what happened once the tickets changed?

Yes the tickets have changed they no longer do the length of stay pass. Instead they do the 14 day or 21 day unlimited pass. I am staying onsite for 2 weeks next year so I will buy the 14 day unlimited pass, with this you can visit all the parks, water parks and disney quest as often as you like within the 14 day period.

You don't have to have a length of stay ticket, or indeed any park tickets at all, just buy tickets for however many days you need.
In addidtion to those mentioned by Flo which are only sold in the UK, the new Magic Your Way tickets have a base ticket for however many days you wish and then you can add non-expiry, a hopping option and plus visits to water parks and Disneyquest. You just buy what you need.
