The poshest meal we have had is at the Grand Floridian in Victoria and Alberts. They do afternoon tea in the hotel also which might be nice. The Villa De Flora at Gaylord Palms is also nice and they have a nice buffet style meal each evening with a different theme pus the hotel is nice to wander around as is the GF.

The Grand Floridian Cafe was lovely for lunch. Elegant and posh without being too stuffy for kids and the resort is lovely to wander around. There are lots of weddings there, so your wedding attire wouldn't look out of place.
Yes, you can book AKL for 1 night. Book direct with Disney on their website here. (http://wdtc.disneyinternational.com/P1.asp)

The Grand Floridian sounds very nice, the tea is excellent, and yes you can book AKL for only one night.

I would recommend the Hollywood Brown Derby. The waiters all wear suits and bow ties, it is all white linen table cliths and napkins and they do fantastic food with great service. Jason O was our server last year and I can imagine him being fantastic doing the "wedding breakfast".
Although probably not an issue, you can keep the cost under control by booking on the Fantasmic package - you can have 3 courses off the entire menu for a fixed price.
It isn't as posh as V&As (because other guests won't be wearing jackets as required at V&A) but it is a fantastic setting. And you'd get to march through "Hollywood" in your wedding attire.
The Coral Reef at Epcot is very romantic for lunch, the lights are low and you're sitting by the living seas tank with the fish swimming around.
Think I've read somewhere that you arent allowed in the parks in wedding attire unless they are marrying you! so I guess it would depend on how much of a wedding dress it is.
I may be wrong however but worth checking up on as it would be awful to turn up and not get in. Something to do with wedding photos with the castle in the background.
