I think the majority of owner operated villas like us accept bookings starting any day of the week. It may be different with some agency villas. Sometimes guest stay for odd durations if they are visiting the beach etc. Flying indirect might be cheaper sliding the dates for a 13,15,20,22 days duration.

We tend to go for our villa first because we're often looking 18 - 24 months ahead, but always ask the villa owner if they would be happy to be flexible a few days either side until flights are released. We've found owners are very helpful and are often willing to give a good deal because we're looking so far out. Once that's sorted, we keep an eye on flight prices and release dates the year before to look for patterns in terms of good prices / good times to book. When flights are booked, we organise our car hire, airport parking and pay a deposit on our Disney tickets if anyone's doing a good pre-booking deal on a deposit basis. Because we're tied to peak times with school holidays, we don't tend to risk last minute deals, but we've always found booking early has kept things pretty competitive. I know that you can get some decent deals a while out if you are flexible about when you fly.

I have never had a problem with bespoke days. To keep costs down we never fly weekends and it has never even come up in conversation with the villa owner.

I agreee with the dates you can fly, going on a Saturday is more expensive, so this time we are flying and returning on a Thursday.
