Party consists of 3 adults and 2 children (7) & (9) they are 1st timers.

(unlikely) Food Shopping, Pool, ?Boggey Creek? Think it might be a bit too much, with all your plans of visiting large parks in consecutive days.
We don't usually do more than 2 large parks in a row, without having a rest day after. Usually shopping, small attractions, water parks etc. are done on a rest day. You will also find large parks and water parks can be busiest on weekends with locals visiting. Try to do bigger parks in the week. There is an information chart of busiest days on this site, see "Crowd Levels" link in main menu. Apart from that, it seems fine.
