Starting the planning - November 2021 first trip

So, I did a crazy thing back in the first lockdown and booked a trip - 1st to the 15th November 2021, staying at Art of Animation in a Little Mermaid room.
Since then I've kept an eye on the news, as we all have, but now with under a year to go, I'm starting to plan! :D
I have been to Orlando before, briefly, and did a day at Universal/IOA, back in 2015 (was travelling after working at a summer camp) so don't currently have tickets for there but I'm wondering if I'll regret not going more than I would trying to fit it in.

So, thought I'd share what I've got so far and see if anyone has any advice. For background, I'll be 31 when I visit, I'm travelling solo and have the added fun of a visual impairment and some sensory stuff to work around. Here's my rough itinerary - I have these park passes booked already, just to be safe:

Nov 1: Arrival day, explore resort, maybe head to Disney Springs that evening, depending on the flight times I can get
Nov 2: Magic Kingdom
Nov 3: Hollywood Studios
Nov 4:
Nov 5: Epcot
Nov 6:
Nov 7: Animal Kingdom
Nov 8: Magic Kingdom
Nov 9:
Nov 10: Epcot
Nov 11: Hollywood Studios
Nov 12: Animal Kingdom
Nov 13:
Nov 14:
Nov 15: Departure day - maybe Disney Springs before heading to the airport, again depending on flight times

Looking at it, I've got a fair few free days, so could definitely do some time at Universal, but is there anything else I shouldn't miss? I won't have access to a car so will be taking Uber/Lyft if I go off property.

Sorry for the long post, and thanks in advance for any thoughts or suggestions :)

Looks great
Are you having any rest days or water park days?

I'm not good at relaxing :d: I do want to get to the outlets, and I'd like to check out a water park :) But I can't just sit round a pool for a day, I'm not built that way :D

Now the skyliner drops you at the International Gateway entrance to Epcot make sure to visit the Boardwalk area and pop in the different hotels. There are some lovely restaurants and even if you are not a nightlife person, it is a great place to walk around in the evening, the entertainment may also be back on by then.
