Christmas fun after New Year's Eve?

We are considering a quick week very early January. We have never been at Christmas so was wondering if this would allow us to get a taste of Mickey and Universal at Christmas?
Just from a quick look I see that MVMCP only runs until 22/12. What about other stuff eg Disney decorations/Universals new Harry Potter stuff?

Just to prolong this debate!
If we go end of December, what happens in the parks on New Years eve? :)
