I'm coeliac, diagnosed in 1997 and Disney are great for gluten free.

Universal/IOA in the parks not so good but manageable...Harry Potter Hogs head do a nice gf breakfast.

Good experiences at Toothsome Emporium and Hard Rock. Out of these two i would suggest Hard Rock.
