Personally speaking I try to have a budget but eating out can be expensive so if you have a villa or apartment prepare food before you go out so that you can take advantage of the supermarket offers

I would recommend a full day for Kennedy space centre as there is a tour bus that will rake around the grounds, plus the amazing indoor museum to see.
