We have been on:off using gusto since last October and the only thing I’ve ever had missing was an onion. Think you have been unlucky. But they are probably at lot busier right now with lockdown.

No, you can just chop the garlic and use a food processor if you have one. Although a mortar and pestle if handy to have anyway.
