There will be offers nearer the time if Disney need them. At the moment they don’t need discounts to pull people in. Once they reopen in Feb, they may throw out some flash sales if bookings are down.

If you find a price you are happy with, book it. If an offer comes up later you can change to that. You won’t get money back but you can use the extra to add dining plan, photopass etc.
