Haven't done value with a child, but have done moderate and delux DVC. We found a 1 bed apartment in Saratoga or Old Key West to be preferable to the room in Port Orleans French Quarter with a toddler. Didn't bother to put up the travel cot in POFQ as we would have had no room, he slept on the bed with all the pillows making a fort - it was OK for a week but would have driven us mad for much longer. We couldn't sit outside or have bright lights on whilst we were there. The 1 bed apartment had a washer/drier, plus kitchen plus living area and allowed us to spread out, plus made coming home easy with clean and dry washing.

In your situation I would look at renting points. It should be said that we were normally in bed and asleep about 30 mins after the toddler on all occasions and the moderate was perfectly fine but we had a better holiday in the delux!
