We have been to NYC twice, 2012 and last year, and Vegas once - 2016.
We are in our 50's.

Depends very much what you like with Vegas. We liked the hotels (fantastic but price depends very much on what's happening on your dates), we stayed in Vdara - beside Cosmopolitan - and can confirm the Cosmo looked fantastic.

We also liked the shows, and the food and just generally sightseeing in the hotels - but we are not drinkers or gamblers. We were there 4 nights and thought that was enough.
It can be very hot depending on when you are going.
We drove to the Grand Canyon West Rim, stopping at Hoover Dam and enjoyed it. Never did the helicopter tour or the Skyway walkway - but really enjoyed it.
Have not been to South Rim - but supposed to be the best of the 2, but better staying overnight there.

NYC is great - tons to do.
