For mine I used all dark, melted it and then spread it on a baking sheet and popped it in the freezer for 10 mins. Then melted the white chocolate and added the peppermint. Spread that over the top of the dark add the crushed candy canes and then chill for an hour before breaking.
I'd read mixed reports about whether freezing the melted chocolate was a good idea or not, but it worked find for me and obviously much speedier if you need the peppermint bark in a hurry. See more...

Thanks Goldia , I use a mix as I love all dark but the little people find it a bit too bitter so I just mix now and it passes the taste test 😉
I’ve never thought to freeze so may give that a go 👍🏻
