The only issue with this is, like ours, by the time we escape from MCO most of the offsite locations are closed for the day. In our case it’s not a massive issue, we just booked a night at a hotel and we’ll get an Uber from the airport.

Could stay at one of the universal hotels for that first night. Make advantage of the early admission as most people are up early doors after the flight previous day.
Then collect car from one of their hotels when leaving.
That way you can offset the no resort parking fee from the uber cost.
Cars seem cheaper from universal aswell
