Your plans look fab and are really coming together.
For your Pecos Bill replacement lunch I'd go for the golden oak outpost. Really tasty waffle fries with chilli and/or cheese, or just on their own. This is a snack credit and should leave room for a sneaky sundae or ice cream cookie sandwich from the plaza on the way out!
We've used the outdoor seating of Pecos Bill to eat the fries in. It's under cover so in the shade.
