The hotel breakfasts have been a factor in us deciding to go for a meal plan in the past. We definitely ate better on the holidays when we had a meal plan, especially at breakfast.

We found that the standard half board was good for a stay in Cheyenne / Santa Fe - a filling breakfast to keep us going until mid-afternoon, then we’d either have a buffet meal in the park and be done with meals for the day, or have a snack then an evening buffet meal in a hotel (not necessarily the one you’re staying in - we like to have a wander around a different hotel in the evening and eat in their restaurant. Cape Cod in Newport Bay is lovely, and not much extra to pay to top up the meal plan. La Cantina in Santa Fe is also a big favourite with my girls.)

You're not really tied to bookings on the standard plan. We liked to book to know we had something in place, but even in August, most standard restaurants have availability at short notice. We sometimes changed our bookings at the last minute and were easily able to get a different booking for standard restaurants on the day.
