1 question though, once choc was melted, how do you stop the choc going funny when you add the peppermint essence? Mine went weird and lumpy and I couldn't spread it on the dark choc. 😔

Adding any liquid to melted chocolate can cause it to seize(go lumpy & hard) so you need to add very small amounts maybe one drop at at time. Another option is to add the essence while melting the chocolate rather than after but it’s quite hard to judge flavour that way
