I did a one day practical course on this at the end of last summer. This was focused on photographing people with interesting street backgrounds. The big thing was to make sure to ask permission to photograph people.
Not sure if this is the type of thing you are asking about - or street shots without people.

That’s exactly the type of thing. So far I’ve mainly shot empty street scenes, but I’d really like to pluck up the courage to ask interesting individuals

I was trying to learn a bit of street photography before lockdown, though i will never be an in your face photographer. I follow Mark.fearnley, Joshkjack, alanschaller, seantuck and the_Nick_turpin on instagram, all ukbased i believe. Also professorhines, elsableda and monaris_ not Uk based. Though they may not all be what you would consider street photography. Some i like because of their use of colour, shadows etc.

Nick Turpin also has a few POV video tutorial type video's on You Tube i found helpful. Particularly for showing how to layer photographs.

Sean Tucker is a good watch on You Tube but is more a light and shadows guy.

Gareth Danks is from Wales but sometimes comes to London/Bristol and will sometimes do photowalks with some that follow his You Tube.

A very young guy Josh Katz on You Tube is pretty good at getting peoples permission to shoot them on the street.

Would love to hear of any others people follow.

I have to be honest - I was waaaaaay out of my comfort zone. And tbh not sure I would do it again.
However, I didn't actually have any bad experience. The worst response I has was a polite "no". But some people were really into it and it was actually fascinating to chat with them.
What we were taught to think about what you will say before speaking. People often respond to flattery. There is obviously something interesting about the person that draws your attention to the. Use that to open. Hair, hat, clothing, piercings etc. People like to be told they are interesting and why.

The guy teaching us was a professional journalist and said the only problems he had ever had was when he was taking photos of people where he hadn't asked and they took it bad.

But it's not for me as I dont find it easy to stop and chat with someone in the street..
