Prepare ahead breakfast

It’s Oh’s birthday today so the diet is out of the window 😆

I found this recipe for a croque Monsieur casserole and slightly adapted it.

It’s really good. Definitely useful for Christmas as you can make it all up the night before and just shove it in the fridge ready for the oven in the morning. It’s also not heavy, strangely.

I added spinach and mushrooms

prepare ahead breakfast? for me, that is just throwing some sausages and streaky bacon into the oven the night before, cooling and sticking in a ziploc bag in a tub in the fridge then in the morning just throwing them in a pan with an egg, decanting onto a nice big cob and squirting some brown sauce on top!

I often do slow cooker breakfast casserole always goes down well we even have it for a late lunch or tea
