I make soup in the slow cooker all the time.

- Roasted tomato and fennel (pre roast the veggies first and add some rosemary)
- Butternut squash and sweet potato (sometimes add coconut milk to make it creamy)
- Vegetable (celeriac, carrots, leek, potato)
- Spicy parsnip (add curry powder for the spice)

Keep the suggestions coming please.

I did make a lovely carrot ginger and sweet potato soup but that upset my stomach.
I have used the Aldi soup mix but that has swede and potato in it.
I had roasted veg with parsnip, aubergine, courgette, butternut squash and sweet potato, again upset stomach.
I’m coming to the conclusion that I can’t tolerate root vegetables or any in the nightshade category so it’s becoming really difficult to find what I like and can eat.

Watercress or mushroom might be lighter? You could try adding oat or soy milk/cream to make them creamier. I’m plant based and have a dairy intolerance and pretty much live off soups in the winter!

I love M&S chicken, mushroom and rice soup.
I tried making it myself and it’s just as nice.
It does have a couple of tsp of cream but you could leave it out or substitute.

So it’s just 2 chicken thighs, 1 onion, 1 large carrot, handful mushrooms quartered. 750ml chicken stock and about 80g rice. Add 2 bay leaves and dried thyme. Then some fresh parsley to serve. I’m going to try it with wild rice next time.

I put all that in my ninja foodi on présure for 4 min, slow vent. But you could it just as easily in a. Kemal présure cooker/soup maker/pan

Courgette and Iceberg Lettuce soup. Sounds strange but it's good...and very easy to make.
