Park bookings

I think I already know the answer but can you only book one park per day now? So no longer able to do a morning in a water park and an evening in AK for example?

You can only book one park, but you can park hop after 2pm without a park reservation.

Water parks don’t need to be booked so if you want to do a water park and then Animal Kingdom, you would just book Animal Kingdom.

You don’t need to book the water parks. You can still just turn up.
If that was your plan, make the booking for a AK and you can go there in the afternoon after the water park.
Park hopping from one park to the other is still available but you have to make a park reservation, use that reservation by entering and then you can enter another park anytime after 2pm. (Assuming there is capacity available)

How far in advance do the park reservations open up and is it likely they will still be in operation come August 22?

We've paid deposits only on our tickets at the minute, but want to make sure we can book the days we want at the earliest opportunity if its still operating.

They're open to the end of 2022 at the moment. Yes, they'll still be in operation in August - Chapek loves the system so it's more than likely permanent. But you won't need to book them until a few weeks in advance, so I wouldn't worry about paying off your tickets early.
