I would look to cut elsewhere, probably Malibu in order to have an extra day (and thus a night) in San Francisco. If you look at ..

1 day for Cable car, Alcatraz and Fishermens wharf, taking in Union Sq on the Powell cable car

Day 2 to pick up bikes and do 'Dylan's Ultimate tour'. Lombard St is very easily walkable from Dylans shop and then you cycle onto Fishermens Wharf, across and over the Golden gate before going down the hill into Sausalito. You hand in your bikes there and use a Dylan's minibus to go up through Marin and have a look at the Redwoods in Muir woods. The minibus then drops you back at either Fishermens Pier or Chinatown/Union Sq.
With those two days, you have hit most of the main attractions whilst also soaking up the atmosphere of a fabulous city.

That's 17 nights as a minimum. Adding 3-4 nights for Vegas and one night for the Grand Canyon doesn't really fit.

You could cut other areas short which would be a pity, or do Vegas / GC as part of another trip.
Thank you all for the great advice! Doesn't seem totally out of the question then. The itinerary above looks pretty much like what we'd want to do although may only do 1 night in LA as not particularly bothered by it from what we've heard. We've also decided to definitely do Vegas & the Grand Canyon on a separate trip - we don't get much annual leave & our 19 nights in WDW this year has pretty much cleared us out for the rest of the year now
