Eating in - money saving dishes - ideas please
We have been talking today about the cost of eating at home and for me it is hard to believe how cheap you can eat.
There are only two of us and we are not big meat eaters. We only eat toast for breakfast, have one ‘proper’ meal a day and then a sandwich or soup for the other meal. This week I bought a chicken. We had roast chicken one day with veggies, cold chicken and salad with baked potatoes the next and then chicken fried rice cooked with lots of veggies the third day. I am now cooking a veggie curry with left overs from the bottom of the fridge, onions, potatoes, mushrooms, red pepper, chick peas, lentils and tinned tomatoes which we will eat for a couple of days. Then we will probably eat pasta for the next meal. Everything is made from scratch but the total cost for the week isn’t much more than £20. What money saving dishes are your staples please? |

I think I'd get a bit bored with chicken three days out of seven and would probably freeze at least one of those chicken meals for the future.
Same with the curry ... |

I make omelettes, tuna pasta, jacket potato’s with cheese and coleslaw or cheese and beans, sausages and mash. I don’t make budget meals much though as my family like a roast chicken, burgers, steaks, shepards pie, curry’s and casseroles, fajitas and generally good food.

Budget meals does not equate not good food...
In Italy we eat what you would term budget meals and they are fresh and fantastic. MSE forum also has a whole section on this which include all of the above posted. |

cheesy tomato pasta for us - roast a couple of handfuls of cheap tomatoes in the oven with salt, pepper and whatever herbs you have and a drizzle of olive oil till they are squishy and unctuous - stir through a big bowl of pasta and eat.

i don't really think of it as "money saving" - for me its more about saving time another night - its just a way of life for me i guess.
i find a large freezer really helps too, that way you can batch cook stuff and save even more money in the long run. that chicken curry you did - just by adding a couple more tins of tomatoes/chickpeas/whatever you have enough to portion off a couple more meals and freeze also, you didn't boil the carcass and throw in some old veg to make stock/soup - again, portion into ziploc bags (or even ice cube trays) and freeze for a handy meal starter another time! buying a joint larger than you need also works out cheaper... then slice it all off, and portion into bags for the freezer for another quick evening meal... just roast some veggies in the oven/make yorkshire puddings/boil some green veg in water, and chuck the frozen meat into the pan with the vegetable water and some gravy granules to reheat oh, also! mashed potatoes! again, its barely any extra effort to make loads more, and it freezes well for a quick sausage and mash night pizza is a nice easy cheap meal, you're looking at maybe a quid a head for ingredients, and the more you do to start with, the less you have to do next time... i make dough a kilogram at a time, which makes ~8 large doughballs. they then get bagged up individually and frozen. same as making tomato sauce for the base - bag it up into portions and take it out of the freezer in the morning before you go to work along with the dough. half my toppings are out of the freezer too... a large block of mozzarella can be sliced up and frozen for later use too, as can jalapenos, olives, salami and other common toppings hth |
