I've been reading up on this and been told to take pesos as we get better exchange rate than chaning £ to $? Is this not the case?

We took a small amount of pesos and the rest dollars and just changed the dollars at reception for 1 dollar bills for tips, it made it easier and the staff seemed to like it this way aswell...also trips we paid in dollars
