In the summer, I make Tuna & Rice, although I like it so much I have tended to make it all year round! Mix a tin of drained tuna with some cooked rice, season to taste, then add a big gloop of low sugar & salt tomato sauce, and an equal sized gloop of low-fat salad cream. Mix well, refrigerate until well chilled, serve with a mixed leaf salad and fresh tomatoes. This is good for lunchboxes, and also good for healthy eating if you have it at lunchtime, as the carbs in the rice keep you full all day.

This has been my favourite go-to home-made meal for years and years. Originally the recipe was from a very upmarket friend of my late mum's, but she used to use prawns instead of tuna. As we were a little more "downmarket" than she was, mum used tuna!

Last night sausage casserole and fried (deliberately) leftover mash - with cabbage/broccoli and carrots.

Tonight, cooked chicken thighs, shredded into barbecue sauce and served with stir fried veg pack and noodles with onions and beansprouts.

Tomorrow nachos - tin of taco beans, heated, served with nacho chips/guacamole/salsa/soured cream and cheese. Friday is quick and easy homemade takeaway night (sometimes pizza or fish fingers/chips/curry sauce.

Saturday chicken casserole with bubble and squeak

Sunday home made meatballs, gravy, in a big Yorkshire pud, with veg and roasties.

Tend to meal plan 4 or 5 days at a time depending on use-by dates.
