Easy lunch for two?
We are moving into furnished accommodation before Christmas to wait for the completion of our new home in Fife. It’s a lovely holiday cottage (we have holidayed there before) but obviously not as well equipped as my home kitchen. What would you advise for an easy Christmas lunch for just the two of us?

Probably sounds daft but I would be just as happy with a chicken salad if it was just the two of us.

I would still have to have a Christmas dinner but I would order M&S Christmas food that's ready prepared and already in baking trays.
Small turkey crown, sprouts & pancetta, stuffing, roast potatoes etc I know its not cost effective and the packaging will be a waste but you can cook it then throw away the baking/packaging 👍🏻👍🏻 |

When it was just me and my 2 teenage daughters last year I cooked a roast chicken.

Open to anything, daughter and partner not coming up until
New Year, so we’re looking for quick and easy I suspect!

Or maybe check out local restaurants? We used to go out for Christmas lunch every year, worked out cheaper for just 2 adults than buying all the stuff, and no washing up!

The chilled section in the supermarket would be my first point of call and I think you can get everything in oven/microwave ready packaging. Roast potatoes in silver foil to go straight in the oven. Same with chicken breast or turkey breast. Microwave mash potato, frozen or chilled Yorkshire puddings, pre-prepared chilled veg, a pack with stuffing balls and pigs in blankets. Should still be tasty but also easy.

Oohhh I like quick and easy. I agree with pretty much everyone else, I would pop to Waitrose or M&S and go wild! No preparation and only a couple of plates to wash up! We love a roast and Yorkshire puddings with gravy and vegetables but if you love pasta or seafood then go for it. Live dangerously
