What to eat on hot days?

We have been eating greek, I griddle some chicken breast seasoned with dried mint and oregano, then dice it, and pop it in flatbreads, with tzatziki, cucumber red onion and tomatoes.
Nice with potato wedges too.

I also made a Mackerel pate this week, just two packs of smoked mackerel fillets (take skin off) blend with three tablespoons of fat free greek yoghurt, and one tablespoon of melted butter, seasoned with black pepper, salt and paprika.
We eat with baguette, or crackers.

Just me for dinner tonight so it was chicken pot pie I’d left over choked chicken and some puff paste made a light sauce chucked in the ends of the frozen peas and sweet corn mixed it together topped with pastry 190/ 15 mins in the oven with a tomato rocket and cucumber salad 25mins from starting to on the table with a nice glass of Chardonnay
As DH says something from what he’d have chucked in the bin

I made a Honey Mustard Chicken Salad for dinner tonight.

It went from freezing and wet to warm and sunny here today
I’d picked up some pork County style ribs in Lidl more meat than fat and boneless
Chucked them in a ziplock bag with Baby Rays sauce and just rumbled them a bout in it every time we went in the fridge
Cooked them on the George Foreman indoor / out door grill with fresh corn on the cob
And red skin potatoe and sweet potato wedges done on the oven Chocolate peacan pie was dessert with home made clotted cream

It’s beautiful here today so I think it’s going to be a charcuterie board for us later
