Egg White Omlette Help Please!

Hubby wants to make egg white omlettes, but they cannot contain fat (so no cheese!). He has colitis, so also cannot add most of the usual vegetables (onions and tomatoes are a big no no). I can add skinned, roasted peppers though. I absolutely hate eggs, so I really don't know what would taste good. He can use garlic granules and onion granules. He cannot have any spices (can you see why I'm tearing my hair out yet?). Do any of you talented dibbers have any suggestions for him to try? I would appreciate any advice or tips you can offer xx

Mushrooms maybe? You can buy mixed packs of wild/forest mushrooms for extra flavour.

He would love to add sausage, bacon and black pudding, but they are all on his forbidden list! He can't eat the vegetables you mentioned either. Never thought of trying fruit, would that work with egg?

Prawns are good in egg White omelette and those fish stick things are surprisingly good.

Maybe not for breakfast though

He does actually like using prawn, crab sticks and white fish in the omlettes. He's not a breakfast person, thankfully! Do you have any suggestions for seasoning? Just using garlic salt and onion salt at the moment.

Just seen Tom Kerridge use poached smoked haddock, that sounded good if it's allowed?
