Something that has just occured to me, if next year we flew home from Costa Rica via Amsterdam does that mean we could buy extra duty free in Amsterdam ?. For instance, leaving Costa Rica we'd be entitled to 1 litre of spirits each, could we then buy more in Amsterdam as it's an EU country? or can you not buy duty free in transit in the EU? ( never transferred through Europe before).

It is what you bring into the UK so only 1 ltr of spirits - if you bought the spirits in a shop in Amsterdam that's okay as you are paying duty on it.
2 lots of duty free are not allowed.

We went with 3 cases visible but 4 in total (1 spare one inside another) and came back with 4 last year!

I've asked before but not had an answer and I can't find one online (though it'll be online somewhere)... If we fly back to Manchester, collect our bags and connect to a domestic flight from another terminal do we declare any goods in Manchester or the Isle of Man? I'd obviously rather declare locally, so it goes into the local exchequer but obviously it's the legal position which determines it not personal preference

I'm not 100% sure but believe you will have to declare in Manchester.
If you have any alcohol make sure you transfer that to your suitcase as you won't be able to take it onto the domestic flight.
