I figured there'd be lots of foil trays going on to store it in. I've run out of steam now for today, but we have got some prep done. First though is breakfast, you will be noticing a theme here.

Sausagemeat and Egg Bagels



Kids and Dave were happy as I didn't forget the cheese today

After the hearty breakfast I then got going on a bit of prep.

Starting with marinading the ribs ready for tonight. I'm all out Nigella for Christmas Eve. Sweet and Sticky ribs marinade in sweet chilli sauce, soy sauce and cranberry sauce with the juice of a lime and a Clementine.



I'll show you them cooked later with Nigellas loaded potato skins. It's the best Christmas Eve meal.

Next up is Nigella's Rocky Road, we have to have it as our Christmas Eve pudding.



Me and the kids couldn't resist a piece each after cutting it up. So chocolatey and good



I've already got a Christmas pudding that I made back in November and so that just goes in the slow cooker tomorrow morning to steam, way easier than having it on the hob and needing to keep an eye on it so it doesn't boil dry. But as you've probably guessed Max doesn't like Christmas pudding I like Mary Berry's Chocolate Roulade. It's lighter than a Yule log as it's a chocolate Swiss roll. It has a white chocolate buttercream filling. The recipe calls for a coffee liqueur in the buttercream which I'm sure would be lovely but add coffee to the list of things MAX doesn't like So I substituted brandy and it was lovely. Sadly the Swiss roll cracked quite a lot when I unrolled it to do the icing, but I patched it all up and no one will ever know



So that's one thing fully prepared and ready for tomorrow. Next up was the sausagemeat stuffing. Dave did all the chopping of onions, leeks, garlic and bread for this. Then it was a case of frying the veggies with the Sausagemeat. This was the stuffing recipe I tried out for our Thanksgiving dinner and it was so good, definitely worth a reprieve. It takes an hour in the oven so I figured we may as well cook it and have it re-heated tomorrow.



I've stocked the fridge up with fizz and I figure that's enough prep.

Ribs and loaded skins sound amazing, can’t wait to see them cooked. Will definitely have to try that meal in future. Good work on all your prep, chilled fizz is definitely the important bit! 😆

Spice 75

This is in homage to a French 75, which will feature at some point over the next week, it's a sugar syrup with mixed spice, lime juice and rum. Pour a small amount in the bottom of the glass, top up with Fizz and relax



Notice the cute Mickey Christmas coasters. I actually bothered to stage this photo rather than taking a quick snap on the kitchen counter ha ha...I knew you'd all appreciate the coasters. I love them.

Ok, so I finally made some mince pies, I make my own shortcrust pastry, but no matter what I do, they always LEAK! I didmt overfill, I sealed them properly, cooked at medium heat not too hot, and they still blooming leaked! Have vowed am never making them again. Will just drink wine and eat chocolates instead! 😫

They still look great to me mine leaked yesterday, but I definitely did overfill as I wanted to use up the mincemeat. They will still taste good I'm sure.
