It’s down to aircraft positioning. If you cancel the flight it can have a big knock on effect. Not all flights come direct back to start point, they may go to a different airport,

A plane may route for example
GLA. MCO
MCO. MAN
MAN. MCO
MCO. GLA

So the knock on can be greater than one flight cancellation. This is one reason why we see VA cancelling/ combining flights many months out, so they can reposition with least disruption.

Youtubers Living The Dream flew on a Dreamliner last month and there was only 29 passengers on board!

No, it would work the opposite wsy.
Scheduled airlines are year round providers, compared to charters for example, tgat only run in the peak periods.

Scheduled airlines gave to run flights for various reasons, including cargo, a very profitable process, positioning flights, the flight from MAN to MCO might be low capacity, but that plane may not be going back to MAN, but somewhere else, and finally to keep very valuable airpirt slots open (BA are known to fly ghost flights to keep LHR slots open)

Scheduled airlines work out their fixed costs for 12 months, based on aircraft costs, fuel, landing fees, care costs etc, etc. Peak times with high volume of passengers will always be more expensive than low pax volume tines, as these fixed costs have to be paid
Airlines do not like to reduce prices, but can look at these in low demand if their peak time volumes and financial returns are high, but if not,then low demand will not be as cheap, or business class tickets are low, this also effects economy costs.

Sometimes people lije VA combine flights, but will not do this as a permanent solution, as they woukd lose a valuable Airport slot

Not to mention they use these off peak flights for a sales pitch as well. Flights from £149.99 each way...

This attracts visitors to their site where perhaps the cheap deal wasn't available for their dates but people may still book something else.

(I know as I've booked this way many times )

DS flew that route 22/11 and said it was half empty. We flew BA LGW - MCO and there were half the WT+ seats empty so we all chequered so we could recline without affecting others at all. WT wasn't full but still pretty busy.
