Flights booked for 2021, help with itinerary please

I may be mad to give Virgin Atlantic more money - waiting for a refund from flights we should have taken earlier this month - time will tell, but I've booked reward seats today. Who knows if we will be able to travel by March 21 without quarantine on arrival? Who knows if Norwegian Cruise Line will still exist?

Despite all the unknowns we've booked or are currently planning -

Delta one LHR -MNP then first class MNP-LAS. We only have 2 hour layover, there is at least one later flight. Does anyone have experience of connecting in Minneapolis-St. Paul? From what I can see we would not need to transfer between terminals? Only travelled Delta One once before and we were very impressed.

3 nights Las Vegas - good prices with Delta for hotels with free cancellation so may book something soon.

Fly to Honolulu with Hawaiin Airways, won't book until things clearer- anyone have experience of Hawaiian?

1 night Honolulu

7 night island cruise with Norwegian Cruise Line. Booked last year! Can cancel, I think/hope with loss of $100 deposit.

3 nights Honolulu - or nearby, any suggestions?

Fly to San Diego with Hawaiian

3 nights San Diego

Travel to Los Angeles for 2 night stay prior to direct Virgin Upper Class flights to LHR.

Any help with our itinerary greatly appreciated. It's our 25th wedding anniversary in June but we decided on March/April as we are both NHS workers so can use leave from 2 different years as would otherwise not be able to take 3 weeks leave together.
