But don't forget that Universal have put the 3rd park on hold so only have this one ride being built currently.

Disney have continued (sort of) with the new builds - Tron, GofG, Remy, and mouse gear as well as the new restaurant in Epcot

Correct. And the items on your list above are projects that were already in the works. Disney has put other projects that have not had construction started on hold. From a business standpoint, what choice do they have?

I don't know if the execs have gone back to their regular pay or not - I would hope not. I know quite a few CMS I work with that got let go with the 28,000 lay off...

Now doubting whether to push back to Spring 2022 as well. For the chance of doing more new rides.

We won’t be back then until 2024 due to a family trip to Oz in 2023.
I think it takes so long as Disney don't tend to do any construction work while the park is open whereas other carry on so they are done sooner and with more productive shifts

Was really hoping to ride both Tron and GOTG... Seems crazy that they've both been under construction longer than the Universal Velocicoaster and thats already almost complete and being advertised...

i am sure that i have seen workers on site during park hours. They certainly make a lot of noise at times.
