It's something no-one can really answer due to galaxies edge - we go for the first time mid September and what I've read is that the usual case would be that it would be quiet weekday daytimes and busy evenings and weekends as it's a locals park so they visit around work. However, galaxies edge opened earlier this year and that will change everything as the locals have annual passes and have been blocked out all summer (why people have been saying it's dead, the regulars just aren't there), so whether they hit the parks during the day once they're no-longer blocked out, we don't know.
Halloween will be busy and the celebrations will bring the occasional visitors into the parks, but my general plan is to hit the parks early and if it gets busy after 4/5pm I've already done most of my day so it doesn't matter. The week beforehand, use the app to check the queue times and that'll give you an idea of how long you'll be waiting and which rides to hit at what time of day.
