Healthy dinners made from scratch

Hi all I’m looking for some tried and tested, not too difficult, family dinner recipes, for 4.

I don’t particularly like cooking and my family aren’t too fussy but we tend to eat mainly meat, potato and veg, with odd spag bol or sweet and sour!

Do you have any great recipes you would like to share, preferably without too many ingredients!

Check out Pinch of Nom on Facebook. Trust me all the recipes are delicious, and even the ones that seem to have a lot of ingredients are SO quick to cook. Diet Cola chicken is UNBELIEVABLE x

I would second Pinch of Nom - I recently got their latest cookbook and there are so many great recipes in there that are healthy and very easy to follow.

The diet cola chicken is a firm favourite here as well.

Diet cola chicken is a favourite here too. Also good as a sweet and sour made with Fanta instead. Tonight we are having home made Nandos. I only cook simple- chicken marinated in the lemon rub, mini corn on the cob and the Pinch of Nom spicy rice.
Pitch of Nom is popular just now because it is mainly easy, cheap and low fat meals. You don’t really need the book, all the recipes are here, pinchofnom/recipe/index/

Have a look at Taming Twins. I've tried a few recipes and they have all been a hit so far. My fussy lot particularly like the slow cooker chicken curry

This is the recipe I have used. I was passed it from someone at SlimmingWorld. It’s nice.

Sweet & Sour Fanta Chicken

Cook of the chicken strips
Add large chunks of onion till they start to soften
Add a can (330ml) diet fanta (or any other syn free diet fizzy orange drink)
3tbs passata
vegetable oxo cube
tsp vinegar
a shake of dried chilli flakes. How much chilli depends how zingy you like your food.
Add some peppers cut chunky
Let it simmer for around 20-30 minutes until it starts to thicken up
At the last minute add some pineapple chunks

I've recently joined slimming world and have made so far the meatballs and pasta and spaghetti carbonara. With the carbonara I added mushrooms and onions. Both really quick and easy to make and eaten by my DH and 2 relatively fussy kids. You'll find the recipes by just googling. Good luck!
