If your actually ‘in to’ using the manual modes, the bridge or mirrorless cameras above would all do a cracking job, if not an investment into a nicer compact camera would do a very nice job,

I’m about half way, I like to fiddle with the settings on my dslr, but it’s bulky, so I tend to use my iPhone for more everyday stuff (like when the dogs being daft!)

As much as I love my canon DSLR it’s a lot of camera to drag around with me. We decided to invest in a canon G7X MII it’s capability for a little camera is great in my opinion.

I was in the same boat. Got a Panasonic TZ 100. I believe they updated it now with a bigger zoom.
Cracking camera.
I had a bridge, but it was still too large so sold it.
