Thanks for this thread, we are doing this route too, but with the added MIA-MCO too, so we are presuming we will have to collect and redrop off our luggage in Miami before we go on to Orlando.
We have 3 hours 15 minutes in Heathrow and 3 hours 20 minutes in Miami, so we are hoping that will be long enough. Fingers crossed!

The only additional check on the way back is that you will have to clear the UK border at LHR. This will happen at T5 connections, after you transfer by bus from T3.

The e-passport gates at LHR will only apply on your return (assuming you are returning to MAN via LHR as well). As mentioned above, on arrival you will transfer from T3 to T5 by airside bus. On arrival in T5 you have to clear UK immigration at connections (either using the machines or at the desk, both of which are in the domestic connections area, it's clearly signed). Then you clear security at T5 before taking the flight to MAN.

On the outbound transfer there is no passport control, just the transfer procedure outlined above by other posters. In both directions, keep following the purple "flight connections" signs and it's pretty straightforward.

Children under 12 cannot use the UK machines. Children aged 12-17 can use the machines if they are with an adult.
